Barley Lentil Buddha Bowls and How to DIY

BUDDHA BOWL VS. NOURISH BOWL

In case you didn’t know, a nourish bowl is the same thing as a buddha bowl, only, it’s rebranded. Not only that, but nourish bowls are a trademarked product by Mann’s. This, by the way, is not a product endorsement of any kind. I’ve never tried these products and I probably wouldn’t spend money on them because I like playing in the kitchen too much.

For all intents and purposes, I’m going to continue using the term buddha bowl because I’m fond of alliteration. Also, I think the term “nourish bowl” is silly. Nourish is a verb, so if we swap it with the synonym, eat, it would be “eat bowl”. Am I a nitpick? Maybe, but I don’t like being told what to do and also, it’s poor language. Someone got excited by the word nourish and just ran with it without giving it any thought.

I get it. We all have busy lives. Who has time to make their own broth when you can pick up a carton for three or four bucks? If you pay anything less than that, I promise you it’s not a steal. Take a good look at the label the next time you want to put it in your shopping cart and tell me what you see. It’s going to be packed with sodium!

TEQUILA LIME CHICKEN QUESADILLAS: A FAMILY FAVOURITE

When I was a teenager, lime chicken quesadillas were a hot dinner item in my family. Mexican nights were always greeted with an air of excitement, but we usually stopped at tacos: flour tortillas (never hard shells), ground beef, taco mix, cheese, and the trappings. Everything changed when a family friend took things to the next level. There would be a big pot of rice seasoned with salsa; refried beans; pickled jalapeños and lime chicken quesadillas oozing with jalapeño Monterey Jack cheese. My brothers and I loved these quesadillas which is why they became the most requested meal.

Confession time: I grew up on store bought tortillas. Making tortillas from scratch wasn’t something my parents had time for, so growing up, I never considered that people actually made their own from start to finish.

The first time I ever encountered homemade tortillas was when my husband, Big Papa–my boyfriend at the time–was feeling ambitious for a Superbowl party potluck. I love buttermilk pancakes as much as the next person. Throw blueberries into the mix and you can find me lining up with a plate in one hand and maple syrup in the other. I don’t make buttermilk at home though. If I had a goat or a cow, I probably would, but as it stands, I live within city limits and while I might get away with a little goat (that’s the dream), I think a cow would get noticed. So there you go, I don’t make buttermilk, but I do make milk kefir. I make a lot of it, in fact, and always have a couple of jars waiting for me in the fridge.
