July 23, 2019 by Sylvia Rose 14 Comments

MAKING KEFIR FLOUR TORTILLAS FROM SCRATCH

Confession time: I grew up on store bought tortillas. Making tortillas from scratch wasn’t something my parents had time for, so growing up, I never considered that people actually made their own from start to finish.

The first time I ever encountered homemade tortillas was when my husband, Big Papa–my boyfriend at the time–was feeling ambitious for a Superbowl party potluck. His contribution was tequila lime flank steak tacos, but going the extra mile, he made a batch of homemade tortillas. This isn’t a happy tale.

SOFT AND CHEWY CHOCOLATE CHIP COOKIES (WITH BOURBON AND VANILLA)

Anyone who knows me well, knows I’m a dessert fiend. I don’t know who I inherited my sweet tooth from, but if there’s a homemade treat lurking nearby, it’s not safe. My husband is aware of the problem. His portion of dessert has disappeared on more than one occasion all because he took too long to get to it. You snooze, you lose, right? Needless to say, cookies don’t last long around me either, especially when they’re soft and chewy. How long do they last around you?

Kefir Pancakes for Breakfast

July 16, 2019 by Sylvia Rose 6 Comments

These plump kefir pancakes will make you swoon (especially if you’re a fan of buttermilk pancakes!). Learn how to make these wonderfully fluffy breakfast favourites from scratch!

golden milk kefir pancakes

I love buttermilk pancakes as much as the next person. Throw blueberries into the mix and you can find me lining up with a plate in one hand and maple syrup in the other. I don’t make buttermilk at home though. If I had a goat or a cow, I probably would, but as it stands, I live within city limits and while I might get away with a little goat (that’s the dream), I think a cow would get noticed. So there you go, I don’t make buttermilk, but I do make milk kefir. I make a lot of it, in fact, and always have a couple of jars waiting for me in the fridge. Here’s my post on how to make your own milk kefir at home if you want to experience that kind of abundance.

Spiced Oatmeal Cookie Ice Cream Sandwiches

July 12, 2019 by Sylvia Rose Leave a Comment

When it’s too hot outside to function, ice cream sandwiches are a delightful treat. Learn how to make this homemade spiced oatmeal cookie ice cream sandwich recipe to beat the heat!

MONSTER OATMEAL COOKIE ICE CREAM SANDWICHES

I’ll admit it. It was Little Debbie’s Oatmeal Creme Pies that inspired these. I never buy them because, well, look at the ingredients, but I have fond childhood memories of them. I partially blame the blatant product placement in 1989’s Honey, I Shrunk the Kids. Does anyone recall the scene where they’re feasting on a giant oatmeal creme pie that one of the kids dropped in the backyard? Those treats always haunt me at the store, but I know if I give in, I’ll only be disappointed. Full disclosure: my cookies are nothing like Little Debbie’s, so if that’s what you want, proceed to aisle 5, please.

A RANCH DIP RECIPE FOR WHEN YOU’RE OUT OF BUTTERMILK

I love buttermilk as much as the next person, but I don’t make it at home and seldom buy it. But, I DO make my own kefir, and since I’m the only one who drinks it at home, I always have an overabundance of it. When I don’t feel like drinking it straight–which is most of the time–I store it in the fridge and before I know it, I have a tidy stockpile if I’m not vigilant about using it. I need to buy buttermilk at the store. Kefir? I’m swimming in it. Step aside, buttermilk.

Vegetarian Shepherd’s Pie Recipe (with homemade veggie ground round)

July 5, 2019 by Sylvia Rose Leave a Comment

Meatless Mondays don’t have to be a sad affair. With this vegetarian shepherd’s pie recipe, your family won’t even notice the difference! Learn how to make this dish in 30 minutes or less, including how to make an easy veggie ground round from scratch.

ALL FROM SCRATCH VEGETARIAN SHEPHERD’S PIE

Vegetarian shepherd’s pie makes an appearance on my menu at least once a month. Textured vegetable protein, commonly known as TVP, costs next to nothing if you buy it in bulk. This makes the savings considerable. In a recipe like this, I normally spend between seven to ten dollars on ground beef or lamb, if not more. Plus, when you compare the price to what pre-made veggie ground round costs in store (and all the nasty ingredients that come with it), you’ll definitely want to make your own!

While vegetarian ground round is cheaper than ground meat, making your own with TVP is even more economical. In Canada, the vegetarian ground round is three or four dollars when it’s on sale. A cup of TVP? Fifty cents. Why wouldn’t you make your own?
