Rustic Tomato Tart with Pesto and Kale

Slip away into late summer flavours with this lemony rustic tomato tart. Prepared on puff pastry and oozing with mozzarella, this tart is simple to make and can be served up in 40 minutes or less. Serve it with a salad for a complete meal!

Ingredients
  

  • 1/2 brick puff pastry
  • 1/2 cup pesto
  • 1/4 lemon
  • 1 tsp lemon zest
  • 1 tsp extra virgin olive oil
  • salt & pepper to taste
  • 1 bunch kale washed and torn into small pieces
  • 3-4 medium tomatoes sliced
  • pepper for the tomatoes
  • fresh mozzarella

Instructions
 

  • Preheat the oven to 450ºF.
  • Roll out the puff pastry into a rectangle until it comfortably fits on a cookie sheet.
  • Using a fork, prick the puff pastry everywhere, except the crust.
  • Spread the pesto onto the puff pastry.
  • In a mixing bowl, massage the oil, lemon, zest, salt and pepper into the kale.
  • Add the kale onto the tart.
  • Arrange the tomatoes over the kale.
  • Tear off pieces of fresh mozzarella and arrange on the tart.
  • Gently tug and fold the edges over and pleat them together.
  • Bake for 20 minutes.
