Creamy Celery Root and Potato Purée
This creamy celery root purée has the simplest ingredients and is so easy to make. Decadent, dreamy and delicious, it is perfect for special occasions and is a beautiful side dish for roasted meats and fish.
- 1 medium celery root
- 3 medium potatoes
- 1/4 cup butter
- 1 1/4 cup heavy cream
- salt for the water
Peel and slice the celery root and potatoes.
Add the vegetables to a pot of cold water and salt liberally.
Bring everything to a boil and let it simmer until the celery root is tender ~25 minutes.
Drain the water and return the celeriac and potatoes to the pot.
Add the butter and half the cream.
Beat with a hand mixer and add the remaining cream as you go, adding more salt if needed, to taste.
Beat until smooth and serve.
- If you want to take this a step further, you can simmer the celery root in milk.
- A squeeze of lemon wouldn't be out of place.
