Kefir Pancakes

If you like buttermilk pancakes, you'll love kefir milk pancakes too! It's a great way to use up excess milk kefir and have a delicious breakfast while you're at it.

Ingredients
  

  • 2 cups all purpose flour
  • 2 tbsp baking powder
  • 2 eggs
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 cup milk
  • 3/4 cup milk kefir

Instructions
 

  • Whisk all of the ingredients together in a large mixing bowl until smooth and homogenous.
  • Let the batter rest for ten minutes.
  • Melt butter over medium heat in a frying pan.
  • When it's hot, ladle on the pancake batter.
  • When you start noticing little air bubbles on the surface of the pancake, flip it and allow to cook for another minute or two.
  • Repeat.

Notes

Butter has a tendency to burn over high heats, so you may have to wipe the pan with paper towel after each set of pancakes.
